Lentil & Cheese Loaf

Ingredients
Directions
1.5 cups green lentils.2 TBS soy flour2 TBS tomato puree3 gr Vegemite0.5 cup cheddar3 TBS parmesan cheese, grated0.25 egg substitute.half cup onion choppedclove garlic
Lentils boiled to just soft and water absorbed - cool
Meantime, chop garlic and fry with chopped onion in oil.
Add to lentils with herbs to taste, vegemite and tomato puree
Sprinkle on Soya Flour
Mix in Cheddar and 1 TBS Parmesan
Mix egg substitute with small amount of water
add to other ingredients until a fairly soft but not sloppy mixture is obtained.
Place in lined loaf tin and sprinkle top with remainder of Parmesan
Bake in mod.oven till firm, covering with foil if getting too brown.
A knife inserted in centre should come out clean when done.
Serve with leafy vegetables of choice or
for complete protein meal with rice salad and green salad.
