Ingredients
Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb Onions, raw, 1 small Red Ripe Tomatoes, 1 cup, chopped or sliced Salt, 1 tsp Sunflower Oil, 2 1tsp
Directions
1 portion:

Heat oil and add oinion and tomatoes, until brown and in pulp form. Add diced eggplants and salt and condiments.

Pressure Cook for 10 mins for until whistle blows 2 times

and its ready to eat.
