Potato and Ham Soup (Non-Dairy)

Ingredients
4 c. (32 oz) fat free chicken broth4 c. water (adjust as needed)1 c. diced ham1 c. diced onion8 medium potatoes, diced5 cloves garlic, minced or crushed1 tsp. salt1 tsp. pepper1.5 c. instant mashed potato flakes
Directions
Put everything in the pot except the potato flakes.
Bring to a boil, stirring occasionally to make sure potatoes don't scorch.
Reduce heat to a low simmer and cook until the onions and potatoes are very soft.
Turn off heat and stir in the mashed potato flakes.

Soup's on!
