Chocolate Cinnamon Cookies

6 tbsp. butter or margarine2/3 cup light brown sugar2 tbsp. sugar1 egg1 tsp. vanilla extract1 tsp. baking soda1 1/2 cup all-purpose flour, sifted1/3 cup cocoa1/2 tsp. cinnamon1/8 cup sugar1/4 tsp cinnamon
1. Beat softened butter until smooth & creamy. Stir in both sugars, egg, vanilla extract, and baking soda.
2. Stir in sifted flour, cocoa, and cinnamon.
Refrigerate for about 30 minutes.
3. Mix extra sugar and cinnamon in a small bowl. Scoop tablespoons of the dough, roll into a ball, and roll in sugar mixture.
4. Place on cookie sheet, several inches apart (do not flatten). Cook for 10 minutes, until cookies are puffed up and cracked on top. Makes about 25-30 cookies.
