omega 3 bran muffins

Ingredients
3 cups all bran1 cup raisins.5 cup ground flaxseed.5 cup omega 3 oïl1 cup boiling water2 cup skim milk1 fresh squeezed lemon ( mix into milk )2 eggs.25 cup molasses2.25 cup spelt flour1 tblsp sugar2.5 tsp baking soda
Directions
combine all bran, raisins, flaxseed, omega 3 oïl
add boiling water and mix
add skim milk mixed with lemon, eggs, molasses
comine sifted spelt flour, sugar, baking soda and stir into bran mixture. do not overmix
let sit at least 60 min on the counter ( not in fridge ). this step is very important - you'll be happy you waited.

spoon into lined muffin tins - all the way to the top
bake in 400°F/ 180°C oven for about 30 min
