1 10 oz. package of frozen spinach 6 large eggs or 3/4 cup liquid egg substitute3/4 cup shredded reduced fat cheese1/2 cup chopped zucchini1/2 cup chopped mushroomssalt and pepper to taste
line a 12 cup muffin pan with foil cups and spray with a cooking spray.
Microwave spinach for 2 1/2 minutes drain and let cool. Beat eggs adding a little water. Combine all the ingredients to eggs. Bake 350 for 35 minutes.
