Buttermilk Brined Chicken

Chicken Thigh, 8 thigh, bone and skin removed Buttermilk, lowfat, 1 quart Garlic, 3 cloves, crushed Salt, 1 1/2 tsp Paprika, 1 tbsp Granulated Sugar, 1 tbsp Olive Oil, 1 tbsb
In a large bowl, mix buttermilk, sugar, garlic and paprika together with a whisk. Add in chicken and stir to coat. Cover with plastic and leave in refrigerator to marinate (at least 2 hours, and up to 12).
In a foil-lined pan, spray a bit of olive oil cooking spray down and add drained, marinated chicken to the pan. Sprinkle a tiny bit of oil on each thigh, along with a bit of paprika and a dash of salt to finish.
Bake in a 425 degree oven, for 20 minutes if boneless, and up to 40 with bone-in. Can also be made with skinless breasts.
