Ingredients
Directions
Lentils, 1.5 cupDry Beans, red kidney, 1 cupTomato Sauce, 1.75 can*365 Organic Diced Tomatoes, 1.75 can1 Bell Pepper (Red), chopped1 onion, choppedButter, unsalted, 2 tbsp Almond Milk - Silk Original, .5 cupChicken Broth, 2 cup1-2 c water*Cumin seed, 1 tsp Garlic, 3 cloves, mincedOregano, ground, 1 tspSalt and pepper, to taste
Soak beans overnight. Drain and rinse and add to slow cooker. Add the rest of the ingredients, except for the salt. I added 3 cups broth/water. Depending on the consistency you are looking for, you can add more or less. Cook on low for 6-8 hours. The longer you cook it, the softer the beans will be. Add salt when you are almost ready to serve. Adding the salt right away will keep the beans from getting soft. Enjoy!
