Black Rice and Turkey Stuffed Peppers

1 cup black Rice2 cups water1 package Butterball Everyday Fresh Ground Turkey (4 Oz), 7 serving1 jar Spaghetti Sauce, Classico Tomato & Basil6 Bell peppers (Red, Yellow, Orange)1 container Trader Joe's Mirepoix2 tsp Olive Oil1 Tsp salt (or more to taste)1/2 tsp pepper1 tsp chili powder1 tsp cumin1 tsp thyme 1/2 tsp corianderA pinch of Cheyenne to give it a kick Or any combo of your favorite chili spices
Prepare rice. Bring 2 cups water to a boil, add rice and a little salt. Simmer until water is absorbed. While the rice is cooking, clean and cut the peppers in half and lay them in a casserole dish.
In a Saut� pan saut� the mirepoix in olive oil until tender. Add ground turkey and saut� until almost cooked. Mix in spices and saut� a little bit more. Add the cooked rice and jar of tomato sauce. Mix together well. Stuff all the meat mixture into the peppers. Bake at 375 for 30 minutes until cooked. Garnish with cheddar cheese and sour cream (calories not included).
