No-Fuss Eggplant Parmesan

Ingredients
Peel Eggplant and cut into 1/2" slices1 lb. ground turkey4 cups low carb prepared marinara sauce1 1/2 T. fresh oregano or 2 t. dried oregano1 t. fennel seeds1 1/2 cups fat free parmesan
Directions
Bake eggplant in 350° oven on cookie sheet sprayed with nonstick cooking spray approx. 30 minutes. Brown ground turkey. Pour in marinara sauce and add in oregano and fennel seeds. Layer the eggplant slices and turkey marinara sauce in a 9x13. Sprinkle with cheese on top. Bake until bubbling , about 30 minutes.
