Winter Fruit Salad

Ingredients
1/2 cup sugar (or 12 packets Truvia)2 cups water1/4 tsp ground ginger1 tsp vanilla extract1 lemon2 large navel oranges2 large grapefruit2 mangoes, peeled and diced2 firm bananas, peeled and diced3 kiwis, peeled and diced
Directions
Combine sugar, water, ginger and vanilla in a saucepan. Use a vegetable peeler to remove wide strips of zest from the lemon and 1 orange, add to saucepan and bring to boil over medium-high heat. Reduce heat and simmer 5 minutes. Refrigerate until cold.

Meanwhile, peel the remaining orange and grapefruit with a paring knife, cutting along the natural curve of the fruit. Hold an orange over a large bowl and cut along both sides of each membrane to free the segments, letting them fall into the bowl. Squeeze each empty membrane to release the juices. Add the mangoes, bananas, and kiwis. Pour the syrup over the fruit, toss well and chill overnight.

Before serving, remove the citrus zest. Spoon the fruit and syrup into bowls.
