Chicken And Broccoli

Ingredients
4 chicken breast, cubed2 cups of fresh broccoli florets1 1/2 cup fat free chicken broth.5 cup diced mushrooms3 cloves of diced garlic1/2 small onion, diced1 1/2 tbsp corn starch2 cups of cooked brown rice1 tbsp olive oil1 tsp of thyme1 tsp salt1 tsp pepper
Directions
Toss cubed chicken with thyme, salt, and pepper.
heat olive oil in pan, add onions and garlic saute about 1 minute. And chicken and cook until outside is cooked (about 3 minutes). Add broccoli, cover pan and cook 2 minutes. Add 1 cup chicken broth. Cook until chicken is done.
Mix corn starch with remaining 1/2 cup chicken broth and add to pan. ler simmer until mixture thickens, about a minute. Add mushrooms and let simmer until mushrooms are done.

Serve over cooked rice. 1/2 cup brown rice and 1 cup of chicken/broccoli is a serving. Recipe makes 4 servings.
