1 lb. lean ground beef1 onion, chopped10 oz can diced tomatoes with green chiles1 C. canned crushed 2 C. chicken broth1 C. frozen whole kernel corn, thawed1 C. canned black beans, drained and rinsed1 1/2 t. chili powder1 t. ground cumin1/4 t. salt1/4 t. pepperOptional toppings (not included in nutrition info): sour cream, avocado, shredded cheddar, chopped fresh cilantro
Cook ground beef and onion over medium heat until crumbled and browned. Drain and put in Dutch oven. Add remaining ingredients and bring to boil. Reduce heat and simmer, uncovered, for about 30 minutes to allow flavors to blend. Serve with desired optional toppings.
