Venison Taco Cassarole

Ingredients
2 lb ground venison4 cup shredded cheese (any kind, I do fat-free)1 16-oz can fat free refried beans2 envelopes taco seasoning (Reduced Sodium)1 package tortillas (8-in)1 cup chopped onion1 14-oz can diced tomatoes1 10 oz can diced tomatoes & green chilessalsa for topping, if desiredsour cream for topping, if desired
Directions
1. Preheat oven to 400 degrees F
2. Brown ground beef. Prepare according to directions on taco seasoning envelope.
3. Add tomatoes, and onions to ground beef and cook until onions are translucent. Stir often. (if not using onions, skip this part, but still add tomatoes to beef)
4. Heat refried beans according to can. This makes them easier to spread.
5. Spray 9 x 13 pan with olive oil.
6. Make 3 layers: Tortillas, refried beans, beef mixture, cheese.
7. Cover pan with aluminum foil and cook 25 minutes. Take off aluminum foil and cook 5 more minutes.
8. Top with salsa and sour cream if desired and serve.
