Sesame Broccoli Soba Noodle Salad

1 bunch broccoli, washed and cut into florets, stems peeled and cut into 1" pieces 2 Tablespoons plus 2 teaspoons soy sauce (can use reduced sodium if you like)2 teaspoons honey or agave syrup3-4 teaspoons dark (toasted) sesame oil3-4 Tablespoons black sesame seeds (can be hard to find; It's not the same but in a pinch use 4 Tablepoons regular sesame seeds, lightly toasted in a dry pan over low heat)3 oz. organic soba noodles, cooked 4 minutes in boiling salted water and drained thoroughly2 cooked chicken breast portions (I grill them on a grill pan), cut into bite size pieces (optional--leave it out to go Veggie)1-2 Tablespoons fresh lemon juice (optional)salt to taste (optional)crushed hot red pepper flakes or Vietnamese chili garlic paste (optional)
Steam broccoli pieces 'til just tender but still green, about 7 minutes. Drain.
Meanwhile, mix soy sauce, honey, seasame oil, lemon juice (optional), and seasame seeds. Add the cooked and drained broccoli and soba noodles; toss gently with tongs or two forks. Add grilled chicken; toss gently again. Chill at least 30 minutes. When ready to serve, taste for seasoning and add a little more lemon juice or salt if necessary. Serve cold or room temperature. I like mine with a little crushed red pepper flakes or Vietmamese chili paste (lethally hot, so try cautiously). Makes 4 generous main dish size servings, but I usually get 6 out of it.
