Spaghetti Squash with Meatless Sauce

1 green pepper, diced1 large onion, chopped3-6 cloves garlic, minced2 28oz cans whole tomatoes in puree12 oz package soy crumbles2 Tbsp balsamic vinegar.5 tsp salt1 spaghetti squash, yields
Half, scrape and bake squash until slightly underdone, about one half hour at 375. Let cool while sauce is cooking.
Stir together pepper, onion, garlic, tomatoes, soy crumbles, vinegar, salt in slow cooker, breaking up tomatoes with a wooden spoon. Cover and cook on HIGH for 3 1/2 hours or on LOW for 5 hours. Add squash for the last hour.
