Tasty Eggplant Parm

Ingredients
Directions
2 tbsp Olive Oil1 dash salt1 eggplant sliced16oz mozzarella sliced1lb box ziti1 jar pasta sauce1 clove garlic minced
Mince garlic and saute in pan with olive oil. Add sliced eggplant until cooked. Sprinkle with a dash of salt. Set aside.
Cook ziti as per box instructions. When done, in a 10x13 casserole dish layer 1c of ziti, 1c eggplant, 1c of sauce and top with 1 cup mozzarella slices. Repeat process until all ingredients are finished.
Place in a preheated 375 degree oven for 30 minutes or until cheese is bubbling.
Makes 8 servings.
