Barley Bean Vegetable Soup

This is very flavorful and filling.
Directions
Cook barley according to package. In stock pot sauté over medium heat onions, orange pepper and carrots in the olive oil for about 5 minutes. Add mushrooms, garlic, and drained and rinsed beans, sauté for 1 minute. Add rest of ingredients except spinach and barley. Bring to a low boil. Reduce to simmer and cook until carrots are tender and liquid is reduced a bit. Just before you are ready to eat add barley and spinach and stir well.
