Egg Bake, Mushrooms, Red Bell Pepper & Canadian Bacon

Ingredients
1 red bell pepper1 4 oz can of mushrooms (or fresh!)6 slices Canadian Bacon12 eggs1 cup reduced fat cheddar cheese2 TBSP Half and Half1 tsp EVOOsalt and pepper to taste
Directions
Beat eggs with 2 TBSP half and half, milk or cream.

Saute red pepper in 1 tsp olive oil until soft. Add mushrooms and Canadian bacon. Saute until mushrooms have finished "sweating" and juices have run dry.

Pour pepper, canadian bacon and mushroom mixture into bottom of an 8X8 or oval baking dish (see photo). Sprinkle 1 cup of cheese (or less) over the top of the Pour pepper, canadian bacon and mushroom mixture. Pour in eggs and gently mix ingredients together.

Bake for 30 minutes at 375.

Serving Size: 6 large pieces or 12 small
