Vegetarian Black Bean Burritos

Ingredients

1 c onion, chopped1 red bell pepper, chopped1 c black beans1 T chili powder1 t cumin, ground3 c baby spinach8 eggs, beaten1/2 c low fat shredded cheddar7 whole wheat tortillas (100 cals ea)
Sauté onions and peppers about 5 mins, add black beans and spices, mix and sauté until beans are warmed.
Add spinach, cook until wilted.
Add eggs, cook (scramble with mixture) until set. Add cheese and mix.
Add 3/4 c mixture to burrito and fold. Roll extras in foil and freeze.
Serving Size: 1 Burrito
