Vegan Sloppy Joes with Lentils

Ingredients
3 cups cooked brown or green (not French) lentils1 medium yellow onion, chopped2 stalks celery, finely chopped2 medium carrots, finely chopped1 medium bell pepper (any color), finely chopped3 cloves garlic, pressed or minced1 8-ounce can tomato sauce1/4 cup ketchup1 tsp paprika1 tsp dry mustard1 Tbsp chili powder1/4 tsp crushed red pepper (optional)1 - 2 tsp apple cider vinegar1 tsp maple syrup (optional)1 Tbsp vegan Worcestershire saucesalt and pepper to taste
Directions
1. Cook lentils using your preferred method. Drain and set aside. If you have never cooked lentils, see instructions in the link provided in the Tips section.

2. In a large skillet or saucepan, steam fry onions until soft. Add garlic and cook about 1 minute. Add celery, carrots, bell pepper; cook until soft, about 5 minutes.

3. Add spices; stir gently to mix into vegetables. Add lentils, tomato sauce, ketchup, and remaining ingredients. Cover and simmer for 15-20 minutes, until lentils have absorbed most of the moisture. If the mixture is dry, add more ketchup.

4. Taste and adjust seasonings as desired. If mixture is watery, continue to simmer until desired consistency is reached.

5. Serve on hamburger buns.

6. Refrigerate leftovers up to 1 week; freeze up to 3 months.
