Eggplant Crust Pizza

Canola cooking sprayEggplant sliced lengthwise, 3 1/2 inch thick slices3 Tbls pizza sauce, I like Ragu Pizza Quick Sauce12 baby spinach leaves3 Tbls chopped or sliced onion1/4 cup Italian bread crumbs1/4 cup panko bread crumbsSalt, black pepper, Adobo seasoning and cayenne to taste
Preheat oven to 450 degrees
Spray a cookie sheet with cooking spray.
Spray both sides of the eggplant with cooking spray lightly and dip first in the Italian bread crumbs and then in the panko bread crumbs. Bake for 20 minutes.
Remove from oven and spread pizza sauce evenly between eggplant. Top with onion, spinach and shredded Parmesan cheese. Add salt, peppers and adobo seasoning to taste. Return to oven and broil until cheese is melted.
