Flour - 3 cupsBaking Soda -1 1/2 tspSalt - 1/4 tsp plus a pinchButter, unsalted - 6 tbspBrown sugar - 1 1/8 cupBananas, ripe, mashed - 3 mediumEggs, beaten - 3 largeCinnamon, ground - 2 tspVanilla extract - 1tspPecans, chopped - 1/4 cup
Mix together flour, baking soda, and salt in large bowl. Set aside. Cream together butter and brown sugar. Add cinnamon, vanilla, and bananas and stir well. Add beaten eggs, stir until well mixed. Pour banana mixture into flour mixture and stir until just mixed. Fold in pecans. Distribute into greased muffin pan. Bake at 375 degrees for 20 min or until a toothpick comes out clean.
