2 cups sweet potato, peeled and cubed3 cups chicken broth1 can black beans, 15 oz.1 can stewed tomatoes, chopped1/2 cup bell pepper, chopped3 Tbls. chopped onion1 Tbls. cilantro, dried1/4 tsp jalapeno (or more to your taste)1 Tbls. chili powder2 tsps. cumin
Heat all ingredients except the sweet potato in your soup pot until it comes to a boil , then reduce heat to a simmer for 25 minutes. Add the sweet potato and cook 5 more minutes.
