Chicken in mushroom wine sauce

2 Chicken Breast cut in half (bone and skin removed) 1 cup White Wine (divided)4 tbsp. Heavy Whipping Cream, 2 cup Mushrooms, fresh (sliced) 2 tbsp Smart Balance Buttery Spread1 small Sweet Red pepper½ Yellow Onion3 cloves roasted Garlic2 tbs olive oil2 tbs. italian seasoning
In bowl place chicken chicken and onions and garlic and 1 tbs olive oil and 1/4 cup of white wine and Italian seasoning. Cover with plastic wrap and let sit. for 1 hour
In skillet add 2 tbs smart balance and melt it melt on medium heat add mushrooms and saute till golden brown. Add Onions from the chicken and saute till translucent. Set aside in bowl.
Cook chicken in skillet where onions were cooked. Once chicken is done add mushrooms and onions back to skillet add in rest of white wine and heavy cream. Cover adn cook for 5 minutes.
Add red pepper and cook for another 3 minutes then serve.
Serving Size: makes 4 -3 oz breast servings
