Lucky 7 Vegetable Soup

Ingredients
2 Tbsp. coconut oil 2 carrots, sliced1 yellow onion, diced2 stalks celery, sliced1 tsp. minced garlic, (about 2 cloves)2 Yukon Gold or russet potatoes, peeled and diced1/2 small head green cabbage, quartered and sliced (4 - 5 cups)1 cup vegetable stock28 oz. diced tomatoes, with their liquid + one 28 oz. can of water or broth1/4 - 1/2 tsp. salt, to taste 2 Tbsp. apple cider vinegar1/4 cup grated Parmesan cheese, for serving (optional)
Directions
Heat a large Dutch oven or stockpot over medium heat. When it is hot, add the oil, and when the oil is hot, add the carrots, onions, celery and garlic, and sauté them, stirring occasionally, for 5 minutes or until the onions are translucent. Add the potatoes, and continue cooking for 5 minutes.

Add the cabbage, stock, tomatoes and water, cover, bring the liquid to a boil, and simmer it for 30 minutes, stirring occasionally.

Add the salt and vinegar and continue cooking for 5 more minutes. Serve immediately, topped with the cheese, if desired
