Flourless Chocolate Chip Chickpea Blondies

1 can (15 oz) chickpeas, rinsed and drained1/2 cup all natural almond butter or peanut butter1/3 cup honey or pure maple syrup or agave nectar 2 teaspoons vanilla1/2 teaspoon salt1/4 teaspoon baking powder1/4 teaspoon baking soda1/3 cup vegan (or regular) chocolate chips plus 2 tablespoonssea salt, for sprinkling
Drain, rinse and dry chickpeas, add all ingredients except chocolate chips and sea salt to blender. Blend all ingredients except chocolate chips and sea salt for sprinkling in blender until smooth, then either hand mix or pulse chocolate chips until mixed in. Spread in 8 x 8 pan, sprinkle with sea salt and 2 tablespoons chocolate chips. Bake for 25 minutes.

I made these for a family dinner today. I didn't have any almond butter, and my granddaughter and DIL don't like peanut butter, so I used 2T. coconut oil and 1/2 c. almond meal. They were VERY tasty! Will make again tomorrow with peanut butter for the wonderful chocolate/peanut butter taste I love. - 2/20/15

Soo yummy! I used a good quality honey from a local beekeeper so they tasted amazing. The peanut butter really compliments the slice. I baked mine for 25mins @ 160 degrees Celsius, left them in the turned off oven for another 15mins then allowed them to cool in which they solidified. SO GOOD! - 8/28/17
