Chicken Pasta Milanese

Ingredients
12 ounces fettucini Buitoni (I only use 9 ounces as that's one package)Pam Spray3/4 pound Boneless skinless chicken breast, cut into bite-size pieces1 package sliced fresh brown mushrooms (8-ounces)1 teaspoon crushed garlic2 teaspoons Italian Seasoning3 cups baby arugula (I use baby spinach)1 can diced tomatoes with basil and oregano1/2 cup white wineshredded parmesan cheese
Directions
1. Cook Pasta as directed. Meanwhile in a large skillet, heat oil over medium high heat, add chicken, mushrooms, garlic and italian seasoning. Cook and stir until chicken is cooked through and mushrooms have released juices, about 10 minutes.

2. Add Spinach and cook and stir until wilted. Add tomatoes and wine. Bring to a boil, reduce heat and simmer for 4 to 5 minutes. Drain pasta and toss with chicken mixture. Serve immediately with shredded Parmesan cheese.
