1 Cup Almond Meal1 Cup Cashew Meal1 Medium Banana, Mashed1/3 Cup Mini Semi-Sweet Chocolate Chips2 Tbsp Plain, Whole Milk Yogurt2 Tbsp Sun Warrior Natural Protein Powder1 Large Egg, Beat1/2 tsp Cinnamon1 Tsp Ginger Root Powder
On the night before, mix almond and cashew meal with 2 tbsp. yogurt, cover and let sit over night in room temperature to break down phytates and other anti-nutrients. The next day, preheat the oven to 350 degrees, add the rest of the ingredients and mix by hand of with a mixer. Butter a pan and add cookie dough with a spoon, making 12 evenly sized cookies. Cook for 22-25 minutes.
