Healthy No Bake Cookies (Vegan)

Ingredients
1/4 cup Pure Maple Syrup2 Tbsp Peanut Butter (home made fresh) 1/3 Cup Lowfat Soymilk1/4 Cup Cocoa Powder1 tsp Vanilla Extract 1.5 Cup Oats
Directions
Bring maple syrup, soymilk and cocoa to a boil in saucepan, then reduce to simmer for 3 minutes or until mixture thickens (be careful not to burn!). Add peanut butter and vanilla and stir until disolved. Remove from heat and stir in oats. Forms 24 small balls.

Serving Size: makes 24 1.5 inch balls (3 balls per serving)
