Curried Stew

1 TBS EVOO16 oz ground beef1 onion, sliced5 cloves garlic, minced3-4 stalks celery1 red pepper1 1/2 cup low sodium broth13.5 oz coconut milkCurry to tastecumingarlic powdercilantro1 lb potatoes, cut in chunks1 lb carrots cut in chunks1/2 lb baby peas
Saute meat in EVOO.
Add spices, onions, garlic, celery, red pepper & cook until softened.
add broth, coconut milk & bring to boil.
Cover & simmer for 30 minutes.
add potatoes & carrots, simmer 10 minutes
uncover & simmer until veggies are tender about 30 minutes
Stir in peas and cook 5 minutes
Serving Size: makes 15 1-cup servings
