  • Number of Servings: 1
Ingredients
1 Cucumber1 Italian Salad Dressing Mix1 cup of Greek Yogurt1/2 an Avocado4-6 sheets of soy paper (Find at Kroger, Asian Food Stores, or Online)
Directions
1) Peel the cucumber
2) slice the cucumber around it's circumference like in this video: https://www.youtube.com/watch?v=QS_R4ZEj7q0 This is because, instead of using rice and seaweed, we're using cucumber as our rolls.
3) Set Cucumber roll peels aside
4) Mix 1 whole package of Italian Salad Dressing Mix with the 1 cup of Greek Yogurt
5) Stir the yogurt and Salad Dressing Mix
6) Take a table spoon of the Italian Yogurt and wrap it in soy paper sealing at the ends to make a roll (this is to prevent the creamy yogurt from falling out of the rolls when we cut them later)
7) Store this in the freezer while doing other prep work
8) Cut the avocado finely into chucks about half the size of a dice
9) Lay the cucumber outer roll flat
10) Add 3 table spoons of avocado
11) Add the soy paper covered Italian Yogurt Mix
12) Close the roll and seal with more Greek yogurt
13) Cut into desired Number of wheels

14) Repeat directions with the remaining ingredients
