1 cup chopped onion2 cloves garliccurry powder1 pkg frozen chopped spinach1 can diced tomatoes drained2-3 dollops of fat free/low fat sour creamcooked white rice
Saute onion and garlic in 2 Tbs canola oil. Add 1 or more Tbs of curry. Add drained tomatos and let simmer for 20 minutes. Add frozen spinach and let everything simmer until spinach thaws out. Add sour cream and mix 10 minutes before serving. Serve over rice.
