Stuffed Tilapia

Ingredients
16oz tilapia filet10oz package of spinach, thawed and srained4oz cream cheese (half a package)1/4c sliced onion4 piece of sun dried tomatoesgarlic power to tastefresh chives to top (one scallion)
Directions
First you put the olive oil, onion and sun dried tomatoes in a skillet and cook down the onion to your liking. then add cream cheese and spinach and keep folding till well mixed. Spoon mixture onto the filet and roll, place in baking dish (sprayed w/ pam) seem side down. After you have them all rolled and in the dish top with fresh chive and and cover and bake at 425* for 10-15min.

    Excellent recipe. I did make some changes. I did not have sun dried tomatoes and used fresh. Also I used fresh garlic and added more onion. DH loved it too. - 4/12/13

    I was not a fan of this...it may be because I had to buy catfish because there was no fresh tilapia. I thought he the fish stayed to moist.... - 1/9/09

    I changed this recipe a little and we loved it. I left out the sun-dried tomatoes and used 1.5 teaspoons of minced garlic instead. I also increased the onion to 1/2 a large onion. Finally, I used Philladelphia 1/3 Less Fat Cream cheese instead of the regular kind. Great way to make fish!! - 8/11/08
