Judys Crockpot Beef Stew

Ingredients
1 large onion - or several smaller onions - chopped4 large carrots - cut into bit size pieces2.5 lbs lean stew beef3 cups beef broth2 cups red wine (optional - could increase broth)2 T Dijon Mustard3 T Tomato Paste1 T thyme3 bay leaves2 T Worchestershire Sauce
Directions
Cut onions and carrots into bite size pieces and put into crock pot. Add beef (I have even added a "chuck" of frozen stew meat). Mix remaining ingredients and pour over meat.

If using frozen meat I suggest Hi setting for 6-8 hours, 6-8 hours on low if meat is thawed.

Serving Size: Makes about 8 1 cup servings
