Chicken Tortilla Soup

Ingredients
1 lb Chicken cut into bite sized pieces3 garlic cloves minced1 can beef broth (14 oz for all cans)1 can chicken broth2 c water1 can corn1 can diced tomatoes (Mexican)1 can pinto beans1 sm 4 oz can diced grn chiles1 sm 4 oz can sliced black olives1 tsp chile powder1 tsp cayenne pepper1 tsp cumin1 bunch c hopped scallions cut half way up green stem1 bunch chopped cilantro (no stems)tortilla chips (not added in calories)Grated pepper jack chees (not added in calories)
Directions
Cook chicken in garlic approx 5- 10 min. Add all cans, including broth and water to chicken mixture. Bring to a boil. Add spices and scallions, stir and let simmer 15 min. You can add cilantro to soup, or use as a garnish.

Server soup over broken tortilla chips. Top soup with cheese and/or sour cream. Enjoy! The best tortilla soup I've ever tried!
