Rice and Bean Cassarole

Ingredients
1 Cup cooked brown rice1 16 oz can beans, (kidney works great), drained and rinsed1 onion chopped1 14 oz can diced tomatos with green chilies2 tsp chili powder1/4 tsp salt1 1/2 C shredded cheddar cheese
Directions
Sauta onion in some water.
Mix everything together, holding back a little cheese.
Put in a 2 quart cassarole dish
Bake at 350 for 30 minutes
Sprinkle remaining cheese on top and bake for an addition 5 minutes

Makes about 8 1/2 cup size servings.

    Easy, used soaked beans. cooked everything seperate and just put under broiler to brown cheese - 1/8/18
