1 large Chicken Breast (cooked), no skin, roasted, 1 breast, bone and skin removed (season to taste)2 stalks Celery, raw, medium (7-1/2" - 8" long), diced finely1/4 c (or less, depending on your tastes) Red Onion Raw, diced finely1/4 c Raddish, diced finely2 TBSP Oikos Organic Greek Yogurt, Plain1 TBSP Hellman's Light Mayo, 1 tbsp (remove)Juice from 1 lemon wedge (to taste)
I cook my chicken breast in a crock pot for 4 hours and then cube it. Once cubes are cooled, combine with diced onions, celery, and raddished.
In a separate bowl, combine lemon juice, mayo, and yogurt. Once combined, mix in with chicken and veggies. Allow to cool before serving. Season with pepper to taste.
