Chicken in tomato sauce

2 tsp olive oil1 cup chopped onion2 cloves garlic1 can diced tomatoes, 15 to 16 ounces1 can tomato paste, 6 ounces1-2 tsp mixed dried herbs, such as oregano, basil and marjoram.3 pre-cooked (poached) chicken thighs, chopped.
Saute the onion in the olive oil until glassy. Add the minced garlic and saute another minute. Add the tomatoes and tomato paste and bring to a simmer. Add the dried herbs. After simmering 10 minutes or more, add the chopped chicken and heat through. Serve with brown rice and steamed vegetables.
