T's TASTY Breakfast sausage and rice

Ingredients
1/4 package Jenni-O Breakfast sausage - if using sausage patties, 2 patties chopped up before cooking1/2 cup diced Bell Peppers - green, yellow, red.... cook's choice1/2 cup diced Mushrooms1/2 cup diced Onion - raw1/2 cup uncooked Jasmine Rice1/2 tbsp olive oil Salt and pepper if needed
Directions
Cook off Jasmine rice and set aside - use instructions on package.

Chop or dice all veggies to approximately same size. I personally like larger pieces.

Break the sausage up into smaller nickel-sized pieces. If you are using sausage patties, chop up the patties.

Brown the sausage on one side of a pan or wok. Half way through cooking the sausage, add olive oil to the empty side of the pan. Add veggies to side of the pan that has olive oil and sautee lightly.
Mix up veggies and sausage in pan and finish cooking together until sausage is fully cooked.

Place the rice in a bowl or on a plate. Salt to taste if you would like. Put sausage/veggie mix on top of rice and serve.
