Chicken Mexican Style Crock Pot

Ingredients
3 medium onions, sliced8 celery stalks diced1 28 oz can of tomatoes crushed1 10 oz can diced tomatoes with green chilies2 Tbsp minced garlic1 15.5 oz can of Light red kidney beans1 15.5 oz can Black beans1 cup frozen corn2 5.5 fl oz cans V8 original - Low Sodium 30 oz - Chicken breasts, skinless/boneless, chopped bite size 5 Tbsp fajita seasoning mix - homemade**Thickener2 Tbsp corn starch1/4 cup cold tap water
Directions
Put all ingredients up to THICKENER in the crock pot. Mix well and cook on high for 4 hours or low or 7-8 hours.

THICKEN: right before serving by mixing 2 Tbsp of cornstarch in 1/4 cup of cold water, stirring until well dissolved. Then drizzle over mixture in crock pot and stir well. Heat on high for a few minutes until mixture thickens then serve,.
