*Chicken Breast, no skin, 2 breast, bone and skin removed, cooked and choppedCorn Tortillas, 8 tortilla, medium (approx 6" dia) Salsa, 1 cup Mozzarella Cheese, part skim milk, 8 oz shreddedLa Victoria Enchilada Sauce, 1.5 cup
Spray a baking dish with non stick spray. Tear 4 tortillas into pieces and place in bottom of dish. Layer chicken, salsa and half of the cheese. Tear 4 tortillas and add. Pour sauce on and top with cheese. Cover with foil and bake approx. 45 minutes at 350 or until hot. *You can use any meat or beans instead of the chicken or just cheese.
