1 Head Cauliflower1/2 C Liquid Eggbeaters1/2C Reduced Fat Mexican Blend Shredded Cheese1/2-1C Panko Bread Crumbs1/4C Pictsweet Onion, Pepper, Celery Blend1/4 tsp Morton's Nature's Seasoning Blend*Optional: Light Sour Cream to top the pancakes
Cut califlower florets then boil or steam in microwave until soft. Drain, then squeeze excess liquid out of the cauliflower. Mash with fork. Add all other ingredients to the cauliflower. Form the mixture into patties about 3-4 inches across. Cook in a greased skillet (Pam Cooking Spray) until golden brown, about 3 minutes per side.
