Cajun-style Tilapia

Ingredients
2 tilapia filets, 4 oz each1 medium egg1/2 cp pankocajun spice blend, to taste3 tbsp canola oil, or enough to cover bottom of pan
Directions

Beat egg and place in small shallow dish.
Place panko in a seperate small dish.
Pour oil into heavy frying pan.

Sprinkle cajun spice blend over fish. Dip the seasoned fish into egg and then into the panko, pressing the crumbs into the filet.
Pan fry until cooked through and panko becomes lightly browned.

Makes two 4oz filets.
