Thai Kale Soup

Ingredients
2 tbsp. Olive Oil8 cups Chicken Broth5 cups Kale, stemmed and chopped3 cups Mushrooms, sliced1 cup Onions, chopped1 block (1 pound) Tofu, firm4 cups Bok Choy, chopped1 can Coconut Milk, lite4 tbsp. Red Curry Paste (A Taste of Thai brand)1/4 cup Soy Sauce
Directions
In a large pot heat the olive oil. Add the onions and mushrooms and cook until soft. Add the stems of the bok choy and cook for 3-4 minutes. Add the chicken broth, and soy sauce, and bring to a simmer. Add the bok choy leaves, along with the kale and simmer for 10 minutes. Meanwhile dice the tofu and add. Stir in the coconut milk and curry paste. Cook 10 minutes longer or until the kale is tender.
