Oatmeal Raisin Muffins

1 cup rolled oats1 cup non-fat greek yogurt1/4c almond milk¾ cup whole wheat flour1/4 cup ground flaxseed½ teaspoon baking powder¾ teaspoons baking soda¼ teaspoon salt1 teaspoon cinnamon2 eggs1 teaspoon vanilla1/3 cup brown sugar1/3 cup canola oil1 cup raisins (if you prefer less, you can use ½ cup)
Preheat oven to 400. Place the oats, almond milk and the yogurt in a bowl and let stand for about 30 minutes.
Sift together the flour, flaxseed, baking powder, baking soda, salt, and cinnamon. In a separate bowl, lightly beat the eggs. Stir the eggs into the yogurt mixture; mix in the vanilla, sugar, and canola oil.
Pour the yogurt mixture into the flour mixture and stir just until combined. Do not overmix. Fold in the raisins. Bake for 15 to 20 minutes. Let cool.
