Sarah's Egg Scramble on a Bagel

1/4 c Onion chopped1/4 c Bell Pepper chopped (i used Red)1 Large egg1 tbsp Milk1 Tbsp Tarragon1/8 c Shredded Cheddar Cheesesalt and pepper to taste1 Bagel of your choice (Toasted optional)1 tbsp Mayonnaise1 tsp Honey Mustard
Chop the onions and Bell Pepper and sautee them untill soft and the onion translucent.
meanwhile beat egg and add Milk, Tarragon, salt and pepper.
Once the onion is translucent pour egg into pan and let fry. Sprinkle cheese on top of egg.
Meanwhile toast bagel. (optional)
once the egg is nicely cooked on one side flip over and cook the other.
once the bagel is toasted spread with mayonnaise and mustard. when egg is done fold over to fit bagel and place top of bagel on top.
makes one serving.
