Ingredients
1 Can Petite diced Tomatoes 28 oz2-4 garlic cloves small bunch Cilantro when chopped about 4T2 T Lime Juice2-Green Onion 2 Jalapenos seeded (can use canned nacho slices)(degree of hot depends on pepper and warm as flavors blend)Black Pepper to taste
Directions
Peal garlic clove put in food processor with cilantro, and Jalapeno chop till fine. In a bowl mix together food processor contents tomatoes and lime juice. slice the tops of the green onion and add them. Stir well and serve. Better if let sit over night, For a milder version use 1 T chilli powder instead of Jalapenos. I don't add salt for health reasons. the tomatoes have enough. The wonderful thing about this recipe is that it can be modified for your tastes. Work on it till you like it. My family eats it by the quarts on everything from standard mexican fare to eggs, potatos, salad etc.
Enjoy!
