Salmon Croquettes

1 can (14-3/4 oz) Pink or Red Alaskan Salmon1/2 cup Simply Potatoes Sour Cream & Chive Mashed1/2 cup chopped celery1/2 cup chopped onion1 egg1 TBS fresh lemon juice1 tsp salt1/2 tsp black pepper2 TBS Panko bread crumbs
Heat oven to 400. Line a large rimmed baking sheet with foil.
Mix salmon, potatoes, celery, onion, egg, lemon juice salt & pepper in medium bowl with a fork. Form mixture into 8 oval patties, using 1/4 cup per croquette.
Place baking sheet in oven for 5 minutes. Remove from oven, coat with Pam, then arrange croquettes on foil. Sprinkle with bread crumbs & lightly spray with Pam.
Bake 25 minutes or until browned on bottom & firm.
