6 cups broccoli florets - chopped into bitesize pieces2 T olive oil2 T minced ginger6 cloves (med to lg) minced4 individual chicken breast halve - sliced thinly across breast3 T coconut aminos (or soy sauce)1 T sesame oil3 scallions - thinly sliced1 c chicken broth1 small can waterchestnuts1 cup cashews
Put saucepan full of water on stove to boil, boil broccoli for 3-5 minutes, drain and keep warm
Heat Olive oil in large frying pan over medium heat, add ginger and garlic stirring for a minute or two until garlic is golden. Add chicken pieces, coconut aminos (or soy sauce) and sesame oil and stir fry 6-8 minutes or until chicken is cooked. Add scallions and cook for 1 min. Add broth, vegetables and cashews, stir to combine and allow vegetables to warm. Serve as is or over rice or noodles.
